Nix Cheater's Tiramisu

I had these babies made for my neighbors, friends and also our local security dude. The feedback --- they loved it! And I'm hoping you will love it too. Now do take note that some people would rather use Ladyfingers but I much prefer normal sponge cake or chiffon... besides its cheaper and easier to find. As for the cream cheese, i say use Philadelphia, you'll never go wrong hehehe

This recipe actually serves 4 people, but I can gobble it on my own :)
Preparation Time : less than 10mins
  
Ingredients
  • 1 whole sponge cake (you can find them at any local bakery joint)
  • 1 cup hot water (preferably boiling water)
  • 2 tbsp instant coffee powder (any brand will do, I use Tesco in house brand!)
  • 1 tbsp sugar
  •  230g cream cheese (room temprature)
  • 2 cups UHT whipping cream (room temprature)
  • ½ cup sugar
  • cocoa powder

Method
  1. Slice your sponge cake into 3 layers, and the cubed them and then arrange a layer on your dish. I use a 13"x9" see-through dish. 
  2. In a mixing bowl, beat the cream cheese till creamy (you'd know when its creamy, trust me) then add ½  cup sugar. Conitnue beating till its evenly mixed then pour in the whipping cream and beat till all ingredients are combined evenly (you may choose to use a whisk but I would prefer an electric mixer, saves time and takes up less effort). Put aside.
  3. Next you dissolve the coffee power together with the sugar in a cup and brush the 1st layer of cake.
  4. Spread the cream cheese mixture on the 1st layer of cake (I like my cream slightly thick, so you have an option of doing it thick or think, depending on your preference)
  5. Repeat steps 3 & 4 until cake is finished and layer the top with remaining cream cheese.
  6. Lastly, cling-wrap your dish and refigerate overnight (if you are not able to hold on that much longer, refrigerate for at least 6 hours)
  7. Spinkle/sift some cocoa powder when ready to serve
