Nix Pineapple Fried Rice

Here's my version of nasi goreng nenas and this goes out especially to my kid bro who has been hassling me for it. Probably trying to impress some omputih chick hehehe

This recipe actually serves 4 people
Preparation Time : 10mins
Cooking Time : 10mins

Ingredients
  • 3 cups cooked rice (long or short grain is really a matter of preference)
  • 2 tbsp cooking oil
  • ½ red onion (chopped finely)
  • 4 cloves garlic (chopped finely)
  • 2-3 chili padi (chopped finely)
  • 1 tsp pepper
  • 1 tsp salt
  • 5-6 pieces tiger praws (shelled and diced)
  • 1 tbsp dried prawns (pounded)
  • ½ cup frozen mixed vege
  • 1 egg (beaten)
  • ½ cup pineapple (cubed, you can also use the canned ones, just dont add the syrup!)
Method
  1. Heat up oil in wok and sautee onions, garlic and chilies till fragrant
  2. Add in mixed veges and prawns and stir fry till prawns are cooked (prawns cook easily -- you'll know so when they turn red -- so just make sure you dont over cook em!)
  3. Toss in the dried prawns, eggs and pineapple and stir fry for 2 minutes before adding in the pepper and salt. Stir fry and make sure all ingredients are well mixed.
  4. Now you can add in the rice and fry for 5 minutes
  5. Then you may serve
